  • Freshly ground black pepper to taste
  • 250g halloumi cheese, cut into 1cm thick slices
  • 1/2 cup pomegranate seeds
  • Optional: A pinch of Aleppo pepper flakes for a little heat

Method, the Cyprus way

  1. Step 1: Rinse the bulgur wheat under cold water. Place in a bowl and pour over the boiling water. Cover and let stand for 15 minutes, or until the water is absorbed. Fluff with a fork.
  2. Step 2: Prepare the Tabbouleh: In a large bowl, combine the cooked bulgur wheat, chopped parsley, mint, cucumber, tomatoes, and red onion. Yiayia Eleni always says ‘the finer you chop, the better it blends!’
  3. Step 3: Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper (and Aleppo pepper if using). Pour over the tabbouleh mixture and stir gently to combine.
  4. Step 4: Grill the Halloumi: Heat a grill pan or outdoor grill to medium-high heat. Grill the halloumi slices for 2-3 minutes per side, until golden brown and slightly softened. Don’t overcrowd the pan, work in batches if necessary.
  5. Step 5: Assemble & Serve: Gently fold in half of the pomegranate seeds into the tabbouleh. Arrange the grilled halloumi on top of the tabbouleh. Sprinkle with the remaining pomegranate seeds. Serve immediately, or chill for later.
